Zhug is a traditional spice mix from Yemen which, similar to Harissa, is spicy and very flavourful. It consists of chili and Cayenne pepper, supported by garlic, parsley and oriental herbs such as cardamom and coriander.
In Yemen, Zhug is traditionally used to season and marinade meat (poultry and lamb) as well as stews.
A piquant paste can be made from the spice mix and used as a dip or condiment: just mix it with olive oil, fried onions and tomato paste.
