The intense aroma of cloves make them well-suited for flavouring marinades, meat, fish, fruit, desserts and gingerbread among other things. For example, whole cloves are used as a spice in mulled wine. Ground cloves are also found in curry spice mixes. The essential oils contained in cloves are what make the flavour so intense, it is therefore recommended to use this spice sparingly. These oils also mean cloves can be used as a fragrance.
