Birch Sugar (Xylitol)

Birch sugar is made from birchwood, looks like white crystal sugar and sweetenes just like common sugar.

Advantages:

• Lower in calories. Xylitol is 40% lower in calories than table sugar.
• Improves dental health. Xylitol doesn`t cause tooth cavities, as it cannot be metabolized by plaque bacteria.
• Low glycemic index (11). After consumption the blood sugar level does not increase so strongly and birch sugar is therefore also suitable for diabetics.

1g xylitol corresponds to the sweetening power of 1g of conventional sugar.

It is ideal for making pastries, cakes, sweets, desserts and jams.
However, it cannot be used by yeasts and is therefore not suitable for the production of yeast dough.
