The expiry date printed on the product refers to an unopened product in unrefrigerated storage. After opening, the product can be kept for at least 3 months if stored below 7°C. Please take care to ensure that the product is completely covered by the pickle solution. If the brine begins to turn a milky white colour, this is an indication of lactic acid bacteria. Please dispose of this product if this occurs.How to use
Our top tip: Don?t pour the brine away, you can use it to conjure up delicious salad dressings with a hint of chili.

...und auch für die bolivianische Küche
Man braucht sie z.B. auch für Saice, ein Hackfleischgericht aus Bolivien. Ich werde dafür allerdings die aji colorado Paste verwenden, da diese laut chili-shop etwas schärfer ist. Diese eingelegten esse ich als Beilage einfach so. Passen auch gut zu würzigem Käse. Aji colorado gehört übrigens zu einer anderen Spezies als die meisten üblichen Chilisorten. Er ist botanisch ein Capsicum baccatum. Die meisten Chilis und sogar der Gemüsepaprika gehören dagegen zur Art Capsicum annuum. Die ganz scharfen, habanero & co. wiederum sind Capsicum chinense. Der aji colorado hat in der Tat ein schön fruchtiges Aroma.
Für die peruanische Küche
Frische aji colorado braucht man für die peruanische Küche. Diese sind zwar eingelegt, aber schmecken noch ziemlich frisch. Die Beschreibung auf dem Etikett sie seien "feurig-scharf" ist aber eine Übertreibung. Sie haben nur eine leichte Schärfe. Ich finde sie ziemlich mild. Macht aber gar nichts, so kann man sie auch als Beilage zu gebratenen Würstchen knabbern, ohne übermässig zu leiden.
