A hot journey around the world - the fascination of international cuisine

"Other countries, other customs" is a popular phrase, and every country has its own, often magical, charm. Our journey goes to the southern countries, because especially there, where hygiene is often missing, hot food is more and more important for the people. Not only is heat loved, it is also a natural way to boost health, because who hasn`t already felt how heat makes you sweat?

Mexico:

Our journey begins in America, or more precisely in Mexico, the original land of chillies. Even the native inhabitants of Mexico, the Incas and Aztecs, used chillies.The Aztecs are even credited with the first idea of using chillies as poison gas in battle: they roasted chillies in large quantities and let the steam drift with the wind to weaken their opponents.
Today, Mexico is still in the top ranks in chilli cultivation; 50 varieties alone are grown there in large quantities, which amounts to over 2 million tonnes of chillies a year. The best known is the jalapeño, which can be eaten unripe, green, red, ripe or smoked as chipotle. The serrano chilli, which is a little hotter and comes from the Mexican highlands, is also very often used for cooking. However, milder chilli varieties such as the Ancho Poblano, Pasilla Guajillo or the Mulato chilli are also popular, which sometimes have an extraordinary variety of flavours.

Typically, you will find chilli in almost all dishes here, and even the "youngest" ones are already getting used to the spiciness.If you come to Mexico as a tourist, you should be warned, because " hot cuisine" is redefined in Mexico. Many traditional restaurants offer a wide variety of tacos, tamales, frijoles, enchiladas and many other typical dishes in different degrees of spiciness.A very original dish prepared by the inhabitants of Mexico is "chilli", which, however, in contrast to Germany, is prepared exclusively with beef.

But real chilliheads must try the traditional national dish in the motherland of chillies instead of the aforementioned "chilli": The famous "Chiles en nogada", which is offered in every old-established restaurant. The dish is made of hot green chillies stuffed with minced meat and served in a creamy white walnut sauce with sweet red pomegranate seeds.
But if you think: "very relaxing", you will soon be disabused, because the spiciness of the dish unfolds during consumption. A visit to the Iman market south of Colonia Coyoacán is also worth considering, as it offers all kinds of opportunities for experimentation. The Iman market is lined with many small, typical fast-food restaurants where the simple Mexican eats. Everything your heart desires is on offer. Try your hand at Mexican cuisine, because if you`re a chilli lover, you`ll get your money`s worth here.

But let me tell you, a visit to the Iman market and tasting the "chiles en nogada" should only be the beginning of your journey into Mexican cuisine, because there are many more exciting dishes like fajitas, pozole,pico de gallo and much more waiting to be discovered by you.

But beware, because the Mexican saying "Chillies are like church bells. Ring once before mass, twice on the way out" certainly has its reasons.
