Sugo alla Bolognese
Alla Bolognese sauce, so loved and cooked in Bologna, is based on lean veal (35%), red wine Barbera DOC and sun-ripened tomatoes.
Although it is worldwide eaten with Spaghetti, it is traditionally served in Bologna with Tagliatelle. The hearty sauce can also be served well with Bucatini or Gnocchi.
