Sardinas de Tomate - Tapas
Recipe for for southern Spanish tapas or starter - Sardines in orange-tomato sauce
Sardines in tomato sauce are a very popular starter in southern Spain. The fine hint of orange gives the dish a very special touch.
Ingredients for 4 people
4 cloves of garlic
2 organic oranges
2 organic lemons
1/2 bunch flat parsley
Fillet the sardines. Peel the garlic cloves and grate the lemon and orange peels. Press the garlic cloves and mix with the grated skin.
Fry the sardines in a pan with some olive oil on both sides and keep them warm in the oven at approx. 60°C.
Put the mixture of garlic and grated peels briefly into the pan and deglaze with sherry. Briefly blanch, peel and chop the tomatoes. Add the tomatoes to the pan and simmer for 10 minutes.
Pour the sauce over the sardines, sprinkle with chopped parsley and serve with an ice-cold glass of sherry.
