Tinned tomatoes are often regarded with great scepticism by many people and often referred to as having a neutral flavour. This might be true of some products, but it cannot be said of these tinned San Marzano tomatoes. This very full-bodied variety has a special quality that other tinned tomatoes simply do not have. San Marzano tomatoes develop a very intense taste of their own in the tin, turning them into something very special indeed. The tins not only help preserve the fruity flavour, but it also helps the flavour become even more distinctive. As soon as a tin is opened, an extremely rich aroma spreads through the room and your mouth starts watering straight away. The savoury, slightly sweet flavour contains a small amount of bitter-tasting compounds, generating a first-class contrast of flavours. The intensity of this overwhelmingly fruity flavour produces an indescribable taste sensation when used in sauces, dips and other similar delicacies. The idea that tinned tomatoes could only develop a rich flavour if made with strongly-flavour herbs such as oregano has been demonstrably proved wrong by these tinned San Marzano tomatoes.

Tinned tomatoes, which almost become a victim of modern technology

The flavour of various products often suffers as a result of the uncompromising competition on the market. Even for tinned tomatoes, mechanisation has become a factor which has increased immensely in significance over the last couple of decades. Today, the cultivation and harvesting processes for tomatoes have to be kept as simple and cheap as possible, so that the final product can be sold within a certain price range. This results in special breeds, which fulfil these requirements. Until now, it was not possible to cultivate more robust varieties, which still had the same intense flavour of other, older varieties. San Marzano tomatoes need to be taken care of and must be harvested by hand. These cost factors make them nigh on unprofitable for industrial production and a financial impossibility for small and medium-sized businesses. Large corporations continued to focus on new cultivars and did not pay any attention whatsoever to the humble San Marzano tomato. This tomato’s individual renaissance began when consumers started to call for tinned tomatoes with premium-quality flavour. Some companies dared to take the step towards higher quality and came out on top. The result is tinned tomato with first-rate features, which have still won over countless people in spite of their higher price tag.
