Chilli Mayonnaise
Recipe for homemade spicy mayonnaise
This chili mayonnaise fits perfectly as a dip for shrimp, for grilled meats, to tortillas chips and nachos, but is also a perfect topping on burgers and sandwiches. Quick and easy to prepare.
Ingredients:
2 egg yolks
200 ml oil
1 tbsp fruity vinegar
1 tsp mustard
1 pinch of hot paprika powder
½ tsp chili powder, or coarsely ground chilli (to taste)
salt and pepper
1 tsp sugar
Preparation:
Place all ingredients in a large bowl and then pull the hand blender slowly from the bottom up. Season to taste with salt, pepper, paprika and chilli powder.
The chili mayonnaise keeps a few days in the refrigerator in a sealable glass.
