Recipe for homemade spicy mayonnaise
This chili mayonnaise fits perfectly as a dip for shrimp, for grilled meats, to tortillas chips and nachos, but is also a perfect topping on burgers and sandwiches. Quick and easy to prepare.
Put the egg yolks, mustard and salt in a tall container and beat the mixture with a hand mixer. Now add very little oil little by little and continue to beat strongly until the mixture is firm. After the vinegar has been mixed in, you can add more oil. Spice up your mixture with dried or fresh, finely chopped chillies as desired.
The chilli mayonnaise will keep for a few days in the fridge in a sealable jar.
