Ají is the common name for chillies in South America, especially in Peru, Bolivia, Chile and Argentina. These can be different species and varieties. In the majority "Aji" refers to the species Capsicum baccatum, which is mainly cultivated there, but some varieties of the species C. frutescens and C. pubescens are also called "Ají".
