At first glance, it would at least seem clear that spices without chili must not be particularly hot, but even this simple assumption is not entirely true. Commonly known spices without chili that still possess a healthy dose of spicy heat are breeds of pepper with a high proportion of piperine and acid amide, which are responsible for the sensation of spicy heat. But what are the differences between herbs and spices?

The German Food Code is here to help

The German Food Code states that spices and herbs are parts of plants, which can be used to add fragrance or flavour to food thanks to the natural components they contain. Whilst spices are defined as bark, bulbs, rootstock, roots, seeds, flowers, buds, fruits and parts thereof, usually used in their dried form, herbs are defined as dried or fresh shoots, flowers, leaves or parts thereof.
