Spicy potato salad

Spicy potato salad

Time needed: 40 min
Difficulty level: medium

Ingredients for four portions:

  • 1.2 kg waxy potatoes
  • 3 tsp caraway (not compulsory)
  • 100 g Mayonnaise (with Jalapeno)
  • 3 eggs
  • 1 large onion
  • 3 tbsp. chopped chives, fresh or dry
  • 4 large Chili Gherkins 
  • 150 g Fresh sausages (e.g. Lyoner)
  • 5 tsp natural mustard
  • 1 tsp sugar
  • some Salt and Pepper
  • 50 ml gherkin brew (Chili Food)
  • 150 ml hot vegetable stock


Preparation

Boil the potatoes in salted water with the caraway for approx. 20 minutes. While the potatoes boil, cook the eggs for 7 minutes and let them cool. Dice the onion and sausages and put them in a glass bowl. Chop the gherkins into quarters lengthwise, and then dice them. Use your hands or an egg slicer to cut the eggs into small pieces, and then put them in the bowl along with salt, pepper, chives, gherkins and sugar. Then mix in the mustard and mayonnaise, and pour over the gherkin brew.

After boiling them for 20 minutes, drain the potatoes, let them cool, then peel them, slice them and put them in the glass bowl. Mix everything together thoroughly. Prepare and heat the vegetable stock, and pour it over just before boiling. Then mix the salad in the bowl again. Season with salt and pepper if necessary. Cover it over and leave it to stand for an hour, and then place it in the fridge.

It tastes delicious with just some wholemeal bread. However, it’s also great as a side for sausages, steak and veggie burgers, and also combines well with a green salad.
