Organic Mojo Verde
Mojo verde is a typical cold sauce from the Canary Islands that is used as a dip or seasoning paste for fish, meat and papas arrugadas (small wrinkled potatoes) in particular. These potatoes form the basis of many traditional Canary dishes. It has a very intense flavour made up of with fresh herbs (coriander, parsley), garlic and, of course, a little chili. Thanks to its cleverly devised recipe, this hot condiment does not need to be heated up as it has a long shelf life without being refrigerated. The flavour unfurls into an incredible taste explosion in your mouth.

How to use
Sandwich spread, seasoning paste for fish, meat and potatoes (see recipe).
Papas Arrugadas (Small Wrinkled Potatoes) recipe: These little potatoes are boiled in an open pan with their skin on and plenty of sea salt, whereby the salt content makes up around 10-15% of the potatoes. After all the water has evaporated, continue to heat the potatoes over a low flame for around 20 minutes until they are dry and become wrinkled. Serve with the salt crust and a dash of mojo (cold Canary Island sauce).
