Through the long colonial era, European, African and Asian cooking cultures have influenced the Caribbean cuisine. In general, the cuisine is spicy and hot and uses many indigenous ingredients, including mango, papaya, pineapple, bananas, coconut, as well as fish, seafood, pork, goat and chicken. This is usually served with beans and rice; a much used spice is also curry.
