Actually, one can not speak of a uniform Chinese cuisine, but must divide it into 8 large regional kitchens (Szechuan, Hunan, Canton, Shandong, Jiangsu, Anhui, Fujijan, Zheijang). Common to all is the main ingredient rice, and in addition to vegetables mostly is used poultry or pork. The southern kitchens are a lot spicier and hotter than the northern ones. There are a variety of vegetarian dishes and even a medical cuisine.
