Lamb, chicken, couscous, chick peas, yoghurt, mint and a variety of fragrant herbs and spices are the main ingredients of the flavourful oriental cuisine.
Fresh vegetables are prepared in all thinkable ways: stewing, roasting, deep-frying, cooking, and served with yoghurt. Often vegetables are marinated and served cold or warm, filled with rice or mince. A special kind of preparation is the Moroccan Tagine, a small clay oven, where the ingredients are gently braised and which conjures delicious dishes like from 1001 nights.
