Whole Dried Yidu Chillies
A popular Chinese chilli variety is the Yidu chilli (yidu lajiao). It is known there as the best chilli for making sauces and stews! Yidu Chilli has a natural deep red colour, meaning when powdered it still looks beautiful and easily dyes whatever liquid it comes into contact with into a bright red.
Yidu chillies have a fruity, warm pepper flavour and a medium heat of around 5,000 - 10,000 SHU. If you want it milder, you should remove the seeds before preparing.

How to use
Rinse the dried Yidu chillies first with warm water, soak in hot water for 10 min. to rehydrate or add directly to the recipe that will cook at least 10 minutes.
