Mace is the fruit fresh or aril of the nutmeg. This is dried or ground and has a similar, but subtler flavour than the much more powerful nutmeg.
Like nutmeg, mace is a fine spice for Christmas baking. The tart sweetness with slight spiciness refines many soups, stews, veal and fricassees, as well as simple sides such as mashed potato, Brussel sprouts, cauliflower, pumpkin and spinach. We recommend using mace in asparagus dishes. Mace can also give cakes, desserts, hot drinks, punch and liquors a refined note.
