The Birdeye Chili originally comes from Africa and is a close relative of the Tabasco pepper. It is often also referred to as piri piri chili. In some regions of Africa this chili type is planted around the fields as a protection against hungry elephants - therefore one should be careful when dosing, because its 100,000 Scovilles rout even adult pachyderms.
The taste of Birdeye chillies is similar to the other archetypal varieties like Pequin and Tepin - they have a clear and aromatic taste with less fruit flavours than e.g. Habanero or Bhut Jolokia. However, their heat is fast and direct. They are ideal for sharpening all kind of soups, stews, casseroles, hot sauces and poultry.
Whole dried Bird`s eye chilies can be used in the kitchen in a number of different ways. Whether cooked whole, crushed with a mortar and pestle or ground up in a spice mill, they add the perfect amount of spice to every dish.
