Fenugreek is popular in Switzerland, where it has many different traditional names. This herb is primarily used when baking bread, to achieve a particularly "rustic" flavour. Blue fenugreek is also used to flavour traditional schabziger cheese, for making spreads or seasoning potato-based dishes. Blue fenugreek has an aromatic fragrance and a bitter taste, although it is milder than ordinary fenugreek.
