Whole Mustard Seeds, golden yellow
Mustard seeds do not have any flavour and are odourless. It is not until water is added that the mustard seeds develop their characteristic spicy flavour. Mustard seeds are used to season marinades, brine solutions and for pickles.
In contrast to the heat of chilies, which the body perceives as a heat stimulus, our body reacts to mustard just as it would to a cold stimulus. This means that body temperature rises, which is why mustard is more commonly used as a spice in colder regions whilst chili, which lowers the body`s temperature, is preferred in warmer regions.
