Allspice is primarily used in Caribbean cuisine. Here in Germany, whole allspice berries are used for making marinades or pickling foods. In its ground form, allspice is used as a seasoning for soups, sauces, game and fish dishes. Particularly when it comes to Christmas baking, there are plenty of sweet treats that just wouldn`t taste the same without allspice.
Allspice is also known as Jamaica pepper, myrtle pepper or pimenta. The English name "allspice" comes from the spice`s flavour, which is reminiscent of cloves, cinnamon and nutmeg. It tastes strongly of cloves - part of the myrtle family - which is why allspice is sometimes called myrtle pepper.
