Thanks to its high essential oil content, chervil has a very pleasant fragrance. Chervil tastes similar to parsley. Chervil is used to season soups, sauces, salads, egg and fish dishes. Chervil leaves are very sensitive and should only be cooked for a very short period of time. Chervil is one of the ingredients used to make the famous French sauce verte and is also in the "fines herbes" herb mix. You may also have heard chervil referred to as garden chervil or French parsley.
