Whole Grains of Paradise
Grains of paradise are a typical spice used in West African and North African cuisine. The spice is also known as Aframomum melegueta, Guinea pepper, Melegueta pepper, or Malagetta pepper, although grains of paradise are not actually a type of pepper, but rather a type of ginger. Grains of paradise generate a hot flavour in the mouth, coupled with a bitter aftertaste. The flavour is an integral part of traditional African cooking and has also become very popular in Germany.
