Wiri Wiri Chili Flakes
Wiri Wiri Chili pepper is a rare variety.
The small, inconspicuous chillies from Guyana are tough - with their heat of 100,000 to 350,000 Scoville, they can certainly compete with the Habanero and Scotch Bonnet chili pepper. Their taste is also deliciously distinct: fruity with a spicy tomato undertone.
In French Guyana this chili is a a staple in everyday cuisine and culture. Wiri wiri are used in a delicious extra spicy table sauce (along with mango) common on dining tables across Guyana. They are favorites in hot sauces, stews, soups, savory dishes like Indian curries and marinades, working particularly well with tomatoes and tropical fruits.
The advantage of chili flakes is that you can dose them well and sprinkle over your food. As the spicy heat is relatively strong bonded in flakes, only moderately heat can be tasted when eaten pure. Chili flakes develop their full heat in the stomach. However, if you use the same chili flakes during cooking, the capsaicin dissolves and becomes fully bonded with the rest of the food.
