African cuisine is incredibly diverse, offering a real explosion of flavours and aromas. Some dishes originating from North Africa, such as couscous and falafel, have found their way into our everyday cuisine. Delicacies such as Tsire, Babaganoush or cooking in a tajine, the traditional Moroccan clay pot, are however still insiders` tips.
Traditionally, stews with vegetables and meat are prepared in the tajine, which consists of a flat plate and a curved conical lid.
The lamb tajine spice is a balanced mix of spicy and exotic-oriental spices, which evoke an intense flavour.
You could fry, for example, lamb, diced onions, sliced carrots and possibly apricots or quince, pour water over the top, and add 2 tbsp. lamb tajine spice. You do not necessarily need a traditional tajine stewing pot for this, you can also use a pan with a lid to make your flavourful oriental dish.
