Panch Phoron is a traditional Bengali five spice mix (North Indian spice mix).
It consists of five ingredients: brown mustard seeds, black cumin, fennel, cumin and fenugreek, which gives it a piquant and nutty flavour.
It is frequently used to season Dal, the traditional North Indian lentil dish. For this the spice mix is fried in Ghee (clarified butter) or oil. It is also suitable for piquant and spicy vegetable dishes, stews as well as for poultry and fish.
