Chipotles are dried and smoked jalapeno chili peppers and are also known as chili ahumado. We use only pecan nut wood for smoking chipotles. Most of the natural 'heat' of the jalapeno is retained in the drying process. Ususally their heat level is about 5,000 to 10,000 Scovilles. Chipotles are used widely throughout Mexico as well as in the United States. Their spicy, smoky flavour is perfect for Barbecue sauces, hearty stews (chili con carne, goulash), and american BBQ specialities (Pulled Pork, Brisket, Spare Rips, grilled chicken).
Our chipotle products don't contain any anthrachinon and PAH (polycyclic aromatic hydrocarbon). Lab certificates are available.
